There were four of us that decided to join a small tour group on January 6, 2022 from Puerto Vallarta to San Sebastian. We toured San Sebastian and on our way back we stopped for a lunch that was included in the tour cost. So this was a scheduled stop, not our choice, but it was so welcomed and enjoyable. It was almost 3PM when we stopped here and we were hungry! We had not had anything to eat since breakfast.
Hold on you say? This is a distillery yes of course, they make tequila right here on the premises. But it is also a wonderful restaurant with delicious food made right here. We were served a wonderful salad, then steak and tortillas to build our own tacos with tomatoes, cheeses, onions and several types of salsa. Beer was included. Then that was not all! Tequila tasting!! The owner himself described each tequila, reposado and anejo. Some flavored. He then came around and poured each and everyone a sample. I think I had about 6 samples, lost count after 3. :-) We bought 2 large bottles of tequila to take with us, but he will also ship them for you. They come all ready wrapped for shipping. Yes it was a sales pitch, but so much fun dining and drinking here. There is a short trail you can walk outback with flowers, a great view of the gorge valley and nearby agave fields. A wonderful and definitely a hidden gem.

We stopped here on an excursion to San Sebestian. We had a really (really) good lunch of steak, potatoes and vegetables. We then had a full description of the distilling process of their small batch tequila. We had an opportunity to sample four different versions which were truly amazing. The entire process done in sight from cooking the "pineapples" in the large outside oven to the patio distillery. Their puppy was so friendly. Just a great place to stop and relax with some incredible food and some tequila. They are expanding and should soon have a place to lodge.

This is one of those places that you hesitate to review because you would like to have it all to yourself. All the food is made to order. Special diets are not a problem; the food will be gladly adjusted to your dietary requirements. I wish I could return at least once a week. My greatest regret is that my party was leaving before I was unable to purchase some of his raicilla tequila.

Lunch and tequila-mezcal(raicilla) tasting with some incredible Mountain Views all around. Dogs and chickens running around the property. Thoroughly enjoyed the meal, followed by the presentation during the tasting afterwards. So good! BRING CASH. No selling in town, no cards, 0 distribution of any kind. They grow, harvest, bottle, and sell - all on site only. After the tasting, you will want to buy. Promise! This is as local and familial as one can get. No corporate sponsors, just real Mexican tequila and mezcal. I will absolutely be returning on my next PV trip with a pile of dinero

Just a one-hour drive from Puerto Vallarta in the Sierra Madre Occidental Mountain range of Jalisco is the Hacienda Don Lalin raicilla distillery. The owner of the distillery who is the grandson of a successful mezcal maker, explained to us the long and intricate process of making Raicilla.
First, he plants the agave by hand in rows amongst all the oak trees at about 1,500 meters of elevation, and does not harvest till the agave plant has reached at least seven years of maturity, at which point he removes the center and bakes it for three days on charcoal made from local oak trees.
Once it has a molasses texture, the agave is “smashed like grapes,” and the mash is slow-cooked, with the juice going into wood containers, then steam condensed in a copper cone cooled by spring water.
Like tequila and mezcal, raicilla is made from the agave plant, and is roasted like mezcal, not steamed like tequila, but he told us that, unlike tequila, it is made from two varieties of agave—lechuguilla and puta de Mula. Also, raicilla is sweeter with a smoky flavor and is richer in taste than most other mezcals.
It takes 10 Kg of agave to make a liter of Raicilla.
TIP: Leave early before all the tour buses arrive, it has a lovely view of the surrounding countryside.
